[00:06.20]In the 1990s, he co-created an international chocolate company [00:11.64]called Max Brenner Chocolate. [00:15.80]His businesses included a 650-square-meter store [00:20.96]on Broadway in New York City. [00:25.24]Then in 2012, Brenner left that business. [00:29.88]A few years later, he began exploring a different side of chocolate. [00:36.28]In 2015, during a trip to Jamaica, [00:40.40]he developed a love and excitement for the fruit [00:44.76]that produces chocolate: cacao. [00:49.48]The Jamaican people taught him a lot about cacao [00:54.12]-- namely, it is more than just chocolate. [00:59.08]Brenner saw Jamaican people making juice, [01:02.88]liquor, and flour from the cacao fruit. [01:07.00]And they used the whole fruit – not just the beans. [01:13.52]Brenner told the Associated Press [01:16.20]that although he had worked with chocolate for 20 years, [01:20.56]he knew little about cacao. [01:24.08]“It is the most unknown fruit [01:26.16]behind the most known fruit,” Brenner said. [01:30.44]While the fruit might have been unknown to him, [01:33.84]it is not unknown to the people of Jamaica [01:37.08]and other countries like Ecuador. [01:41.92]The Ecuadorian people also taught Brenner how to use cacao. [01:48.20]In Ecuador, he saw people drink cacao water [01:51.88]and eat the dried fruit of the pods. [01:56.20]You can eat the whole fruit, he learned. [01:59.48]But in making traditional chocolate, he added, [02:03.56]“all of the other parts of the fruit are wasted.” [02:08.20]The fruit is a little sweet and a little sour. [02:13.56]The cacao water is described as refreshing. [02:18.56]The seed inside is the cacao bean. [02:22.52]This is the part that is processed to make chocolate. [02:27.72]With his new business and his new knowledge, [02:31.52]Brenner said he wants to tell both sides of the chocolate story. [02:38.68]So, he has created new products [02:41.52]that celebrate the traditional side of chocolate-making [02:46.00]and the natural taste of the cacao fruit. [02:51.00]Health experts have long noted the possible good effects [02:55.84]that chocolate can have on health. [02:59.12]The T.H. Chan Harvard School of Public Health [03:02.56]says on its website that the dark chocolate produced [03:07.00]from cacao has many necessary nutrients. [03:11.92]These include iron, copper, magnesium, [03:17.40]zinc, phosphorus, and substances called flavanols. [03:25.44]Brenner said the unsweetened fruit has other nutrients as well. [03:31.56]Cacao is high in antioxidants. [03:34.88]And the water is full of natural chemicals called electrolytes. [03:42.16]These are substances needed in the body’s fluids [03:46.20]to control important processes [03:49.56]including how your body uses vitamins and minerals [03:54.04]and removes waste. [03:57.36]In addition to health, Brenner said [04:00.08]that the cacao he uses for his products [04:03.16]is farmed in a way that is not harmful to the environment.
